Wine Tannin balances dull, low tannin wines and ciders, adding punch and “bite” to the overall flavor profile. Beyond balancing flavors, Tannin aids in clarification, especially in combination with Gelatin during fining operations of wines with high pectin content.
Specific wine types will require differing dosage amounts and typical recommended quantities are as follows: 1/4 tsp per gallon for white/rose wine must; 1/3 tsp per gal for red wine must; 1/2 tsp per gal for fruit wine must, albeit, certain fruit wine recipes will require only 1/8 tsp due to the pre-existing tannin content of particular fruits.
