Simpsons Crystal Medium imparts a more dark-golden to copper hues to the finished beer, and contributes more of the familiar crystal malt flavor notes of malty sweetness, caramel, and toffee.

Often found in darker ales and lagers, Crystal II proves a versatile grain for a wide range of styles including Munich Dunkels, Brown Ales and Porters. When used in modest amounts, Crystal II adds a facet of mild sweetness in Belgian Dubbels and Dark Strong ales.
For a Black IPA, specify a malt bill with 79.7% 2-row pale malt, 10.8% German Dark Munich malt, 4.9% de-husked Carafa III malt and 4.6% TF&S Crystal II malt. For the hop bill, utilize Chinook @ 60 minutes remaining for 74.5 IBUs and Simcoe and Amarillo @ 5 minutes remaining to reach an IBU of 5.2 and 3.7 respectively. Ferment with Wyeast 1098 British Ale yeast. Following fermentation, transfer the beer to secondary and dry hop with 1 oz Simcoe and 1 oz. Amarillo for 3 days only.
