Application

Originating from the Vinhos Verde region of Portugal, the QA23 was selected for enhancing the flavors and aromas of grapes utilized in the production of premium white wines. Recommended for styles such as, Chardonnay, Sauvignon blanc, Chenin Blanc, Colombard and Semillon, the QA23 produces fresh, fruity and clean wines by enhancing aromas of the above listed terpenic varietals through beta-glucosidase activity and excellent conversion of thiol. The strain functions as complementary yeast for developing the passion fruit character in Sauvignon Blanc.

The QA23 ® has low nutrient and oxygen requirements and will ferment juice with low turbidity to dryness at low temperatures (10°C). Lalvin QA23 ® is now being used in winemaking in most countries.
