Chateau Cara Gold is a Belgian crystal malt. It imparts a strong, caramel-sweet aroma and unique toffee-like flavor, adding a rich amber color to beer. A distinguishing characteristic of all caramel malts is glassiness. This glassy endosperm creates the desirable non-fermentable components that give true caramel malt the ability to contribute mouthfeel, head retention, and extended beer stability. Cara Gold is best suited to dark or brown beers.

Crystal malts are gently cooked during the malting process. Cooking initiates the enzymatic conversion of starches into fermentable sugars, and caramelizes some of the sugars as the malt reaches its final color. This eliminates the need to mash crystal malt, and ensures that some of the sugars will survive fermentation to sweeten the beer.

Application Tip:

For a hybrid Belgo - American Pale ale specify a recipe with 83.1% Belgian Pale Malt, 12.5% Belgian Munich, 4.2% Belgian Cara 45 and .2% Belgian Chocolate Malt. Hop with Kent Goldings at 60 minutes for 19.1 IBUs , Slovenia Celeia hops at 30 Minutes for 1.6 IBUs and Amarillo hops @ 4.2 IBUs followed by Celeia hops for 1 IBU at 15 minutes remaining and Amarillo at 15 minutes for 2.6 IBUs and ½ oz of Amarillo and 1 oz. Celeia at flameout per 5 - gallons. Ferment with Wyeast 1762 Belgian Abbey II yeast.
