Weyermann CARAFA Special Type 3 is a dark-roasted specialty malt made from high-quality spring barley.  Where malt-based bitterness is not desired, Weyermann CARAFA Special Type 3 is a perfect fit. As the de-husked version of CARAFA, it produces rich color, body, flavor and aroma without the harsh flavors and astringency typical of dark-colored grains.

Application Tip:

In Schwarzbiers, de-husked Carafa III provides mild roastiness and chocolate flavors and aromas. Baltic Porters and Dry Irish Stouts gain a measure of milder flavor with Carafa malts replacing a portion of standard Roasted Barley or Black Patent.

For Coffee Porters, substitute a portion of the UK Chocolate malt with Carafa II and Carafa III.

For the recipe, specify 80.1% UK Pale Malt, 8.7% German Munich Malt, 2.4% TF&S Crystal I Malt 85L, 2.4% Carafa II, 2.4% UK Chocolate Malt, 2.1% German CaraRed and 1.9% Carafa III Malt. Substituting the Carafa Malt for UK Chocolate or Black Patent will diminish the acrid bitterness derived from the grain, allowing the coffee to add back a certain amount of bitterness to the overall flavor profile.
