Crisp Brown malt is roasted specialty malt. It has a strong, dark-toasted grain flavor, slightly nutty with a hint of bitter chocolate. Brown malt imparts dark amber to light brown hues. It is used in many older English ale styles, and is an essential ingredient for traditional porters.

Application Tip:

For a version of Baltic Porter, specify a recipe with 72.1% UK Pale Malt, 18% German Dark Munich Malt, 3.6% TF&S Brown Malt, 2.7% UK Chocolate Malt, 1.8% TF&S Crystal Malt I 45L and 1.8% UK Pale Chocolate Malt. Hop with 1 addition of German Northern Brewer, achieving 32 IBUs. Ferment with Wyeast 1028 London Ale yeast.
