For the improvement of head retention, foam stability and bodifying properties in finished beers, Carahell may be specified for a usage rate of 10 – 15% of the malt bill. Carahell enhances aroma while providing a full round flavor, deep saturated color and gentle notes of caramel to the finished beer. For beers designed to have reduced or non-alcoholic levels, grain bills can consist of 30% of the malt.
Kilned to a golden-brown hue, the slightly aromatic kernels of Carahell malt provide finished beers with full, rounded aroma, depth of color and a firm, creamy head.

At the transition point between Carapils and caramel malt, Carahell will add a couple of points of color. A full pound will shade the color of lighter hued beers in 5-gallon batches. By adding it to any lighter hued beer, Carahell will provide body and head retention in styles such as, Pilsners, Maibocks, Wheat’s, lighter colored fest beers, Shankbier, pale ale, Golden ale or any light lagers.
