Fermentation Characteristics:
Selected  from a French grape cultivar, the Red Star® Côte des Blancs (Davis 750) is a relatively fast fermenter and tolerates alcohol levels of 14%. Producing low amounts of foam, low volatile acidity and sulpher compounds, the yeast benefits from Yeast Nutrient supplementation. The strain ferments best between 17°-30°C (64°-86°F) and but will still exhibit a regular fermentation  between (12°C-14°C, 53°F-57°F).

While the strain requires nutrient additions for most Chardonnay fermentations, the Côte des Blancs produces fine, intense fruity aromas and lower fermentation temperatures allows the yeast to finish the wine with some residual sugar. Recommended for reds, whites such as, Sauvignon Blanc and Moscato, sparkling cuvées and non-grape fruit wines, especially in the production of dry and tart apple ciders. 

APPLICATIONS:

Ideal for all high quality white wines, Côte des Blancs creates  intense varietal flavors and aromas in styles such as, Chardonnay, Sauvignon Blanc, Riesling, Gewurztraminer and Moscato.

The strain allows optimum aromatic expression in wines produced from neutral grape cultivars.

As an aromatic yeast strain, Côte des Blancs showed very good results on sparkling and rosé wines.

For ciders, the yeast stain ferments the must to a fruity dryness, leaving the resulting beverage crisp, clean, tart and flavorful.
