Originally bred for the varietals high alpha content, Columbus has become accepted as great variety for dry hopping. Alternatively known as Tomahawk and Zeus. 

Pungent and piney, Columbus has been primarily used for bittering but still provides rich flavor with hint of lemon, black pepper, licorice characteristics with subtle citrus overtones.

Typical A.A: 14 – 16%

Possible Substitutions: Chinook, Galena, Millennium, Nugget

Application Tip:

As a bittering hop, Columbus often provides the bittering quality in Pale ale’s of varying gravities.

To complement the tropical fruit flavors of Simcoe and Australian Galaxy, a small percentage of Columbus as a dry hop addition will provide pungency as counterpoint.

For Stouts and Barley wines, the high alpha varietal can knock down the total ounces of hops used in the former or a myriad of Imperial styles, reducing astringent and vegetal flavors introduced by large volumes of hops in the kettle. Creates a pleasing citrusy aroma along with pungent flavors and aromas.

Peppery notes from Columbus bittering additions blends well with Rye in Dark beers with a small amount of Chocolate Rye and a total of 25% rye in the grist.
