Wyeast - Denny's Favorite 50
A terrific all-round yeast, the 1450 can be used for almost any beer style. A mainstay of Portland’s famed home brewer, Mr. Denny Conn, the 1450 strain produces a big mouthfeel, accentuating the malt, caramel, or fruit character of a beer without being sweet or under-attenuated.
Temperature Range: 60-70F 15-21C
Alcohol Tolerance: ABV 10%
Styles: American Amber Ale, American Brown Ale, American IPA, American Pale Ale, American Stout, Braggot, Brown Porter, Christmas/Winter Specialty Spiced Beer, Classic Rauchbier, Cream Ale, Fruit Beer, Imperial IPA, Irish Red Ale, Other Smoked Beer, Russian Imperial Stout, Spice, Herb, or Vegetable Beer, Strong Scotch Ale, Wood-Aged Beer
Fermenting cleanly, the Denny’s strain can be utilized as a house yeast, producing beers with minimal esters, especially at the bottom end of the strains fermentation temperature range (60 – 62).
For Rye Pale ales, the yeast creates a clean character, allowing American citrusy, piney, fruity hops to dominate while still providing space for the spiciness of the rye in the flavor profile.
For darker beers such as porters, stouts, the yeast creates space for the roasted malts to become assertive without being overly dominant. Add rye to a dark ale and the yeast enhances the crackery, pretzel notes from the rye to punch through the malt.
