Well-modified and produced by the premier maltster in the United Kingdom, Maris Otter Pale Malt can be utilized for the production of a range of ales from the British Isles. For the creation of excellent Bitters, Pale ale’s, Milds, Browns, Porters and Stouts, Maris Otter is a fine base malt, providing a slightly nutty and biscuity flavor to the finished beer.

For refined, malty and creamy English Mild, create a malt bill with 63% Maris Otter, 14% Flaked Oats, 9.3 % TF&S Crystal 62L, 4.6 UK Chocolate Malt, 1.8% Pale Chocolate malt and 7% Corn Sugar. Utilize Northdown and UK Fuggle for bittering and UK Fuggle at flame out. Ferment with the Wyeast 1318 London Ale III strain to achieve proper malt driven flavor and attenuation for the style.
To produce a high gravity Black IPA, utilize 79.7% Maris Otter, 10.8% German Dark Munich, 4.9% de-husked Carafa III malt and 4.6% TF&S Crystal 62L malt. For Bittering, specify Chinook while finishing the hop bill with Simcoe and Amarillo at 5 min remaining in the boil. Dry hop with Simcoe and Amarillo for 3 days prior to packaging. Ferment the wort with Wyeast 1098 British Ale yeast to allow the malt and hop to dominate the flavor and aroma profile.
