Commonly found in Belgian Saison styles. Star Anise is added to the boil in amounts ranging from ½ - 1 oz for a 5 – gallon batch. Providing a flavor similar to licorice, the flower pods should not be crushed and typically added to the boil with 15 minutes remaining to properly extract flavor. With Star Anise, a small amount has a powerful effect.
For a unique flavor, add Anise to a Saison with Sweet Orange peel and Coriander or as an alternative to licorice in Porters or Stouts.
