Built on a foundation of caramel maltiness, the English Pale Ale is based on the classic style typically found in many British pubs. With medium-high bitterness and overall hop character derived from a heavy addition of bittering hops, the English Pale kits makes a drinkable, well-balanced Special Bitter.
Contents of the kit include: ingredients, bottle caps, priming sugar, and brewing procedures.
Fermentables: 3.3 pounds of Maris Otter Liquid Malt Extract (LME) and 2 pounds of Light Dried Malt Extract (DME).
Specialty grain: 8 ounces of Caramel 60L.
Hops: 1 and 1/2 ounce packets of UK Fuggle hops, and 1 ounce UK Golding (hops may vary due to availability).
Yeast: 1 sachet.

To upgrade the yeast to a liquid culture, purchase the Wyeast 1968 London ESB Ale yeast separately. Providing a subdued fruitiness in the aroma and flavor, the strain leaves a slight residual sweetness, allowing the sweet caramel malt and hop to find the apt balance in the finished beer. (Additional yeast sold separately.)
Alternatively, purchase the Wyeast 1335 British Ale II yeast separately. Providing less fruitiness and maltiness than the 1968 strain, the 1335 will ferment drier and crisper than the 1968, placing the accent on the hop bitterness, flavor and aroma.
