Unique de-husked roasted barley malt adds aroma, color and body, with a mild. smooth flavor. Like the other Carafa’s, Carafa I has become a favorite among craft brewers for Stouts, Porters, Schwarzbiers, Bocks, Imperial styles and any kind of darker beer where less bitterness is desired. Usage can range from 1 – 5% in the malt bill. For 5-gallon batches usage can range from a few ounces to a ½ lb.
Carafa I reduces astringency and bitterness, while adding coffee-brown color, a coffee-like bouquet, dark- beer aroma, as well as body and mouthfeel to finished beerbut without introducing harsh flavors. Even small amounts of CARAFA SPECIAL® malts in the grain bill produce dark beers of unusual smoothness and mildness with a firm, creamy, white head.

Usage Rate: 1 – 5%
For simple color correction, specify Carafa I to the malt bill in the amount of 1 – 5% of the total grist. To gain the correct deeper color of the range for Amber ale, utilize approximately 2 – 3% Carafa I in the overall recipe.
