The active dried yeast culture proves suitable for all types of cider and ferments cleanly through a temperature range of 54-82 F. For optimal performance, the recommended fermentation temperature should be between 60-70 F with the actual temperature maintained without fluctuation. To prevent extended lag time and risk of bacterial contamination, the temperature of the must should be above 60 F prior to yeast pitch. The 9g yeast packet is suitable for a 5 – 6 gallon batch.
