Citrusy hop with flavors and aromas of black tea, melon, lemon, orange and stone fruits, especially peach and apricot, Amarillo provides a good alternative to Cascade with higher Alpha Acid percentages.
Typical A. A: 8 – 11%
Possible Substitutions: Ahtanum, Cascade, Centennial, Simcoe
For the production of IPA and Pale Ale’s, Amarillo hops combines well with Simcoe in Black IPA’s and Amber ales in flavor and aroma additions. Try it in a variety of American Ale’s including the Imperial styles so prevalent in Commercial and Home brewing today.
Often specified in highly hopped ales from pale ale, Imperial IPA and even American wheat beers, the hop may become overwhelming with piney pungent flavors as the amount in the kettle increases. For best results, use mostly as a late flavor or aroma hop, especially in dry hopping applications.
