Thought to resemble Cascade in flavor and aroma, Ahtanum will also produce more grapefruit flavors and lower bitterness than Cascade with apricot aromas and flavors similar to Amarillo while offering mildly piney, herbal and pungent qualities. Typically bears the hallmarks of American C hops with floral and spicy notes with a classic U.S. west coast presence.
With lower essential oil percentages, Ahtanum requires higher amounts to gain the proper flavor and aroma profile in a finished beer. For dry hopping additions, instead of 2 oz in India Pale ale, add 3 ounces to gain the qualitative effect of hops with higher oil content.
Functions nicely as a flavoring hop, complementing Simcoe in Amber ales or as a dry hop in Blonde ales with Czech Saaz as flavor hop at 15 and 5 minutes remaining and Citra at flame out.
