Extensively used in the kettle and for dry hopping, US Kent Goldings is the American grown version of the classic English Ale hop typically associated with all varieties of English bitter, porter, stout, brown ale et al.
Characterized as smooth and delicate, UK Kent Goldings has flavors and aromas often described as floral, lavender, citrus, spice, artichoke, honey, earth, woodruff and lemon with thyme overtones, albeit inflected differently from growing conditions in the United States, including an aroma and flavor of tea, chocolate and berry.
Typical A. A: 4 – 6%
Possible Substitutions: UK Golding, Fuggle, Willamette, Styrian Golding
For creating the variety of English Bitters from ordinary to extra special, US Goldings provide the classic flavor and aroma for the style, especially placed in the kettle at flame out.
For bittering a English mild ale, the varietal’s earthy qualities blends well with the roast and chocolate notes in the finished beer, especially with Wyeast Strains 1318, 1028, 1968 and 1098 performing the fermentation.
