From Thomas Fawcett & Sons Malting company, Pale Chocolate is mainly utilized for flavor enhancement and/or color correction. Kilned to a lighter hue compared to traditional & darker chocolate malts, the malt provides smooth coffee flavors in stouts, porters and mild ales. Recommended usage rate is 1-5% depending on style. Typical Color 180-250L

Lighter in color and milder in taste than regular chocolate malt, Pale Chocolate has the nutty malt flavor of lighter toasted grains, but also some of the heavier flavor of darker roasted malt. Small quantities can be used to add color to dark beers. Larger quantities will add strong flavor and color, excellent in porters and stouts.

For a partial mash version of Northern English Brown ale, specify a recipe with 47.8 UK Pale Malt, 39.5% Light Liquid Malt extract, 9% TF&S Crystal Malt I 45L, 3% Pale Chocolate and .7% UK Chocolate Malt. Hop with Fuggle @ 60 minutes remaining, achieving 26.6 IBU’s and Fuggles again at Flame out with a ratio of 1.25/5 –gallons. Ferment with Wyeast 1335 British Ale II yeast.
