For superb Continental style Pilsners and golden hued lagers, perform a three-step mash program with Protein and both Beta and Alpha amylase rests.
Quite versatile, Avangard Pilsner malt provides the base for styles ranging from Pilsners to Bocks. Accentuated with specialty grains such as Vienna, Munich or the full range of crystal and/or carafa malts, Pilsner malt provides a portion or a majority of the grist in the production of Octoberfests, Dopplebocks, Dunkels and Schwarzbier.

For creating lagers and Kolsch styles with a dry maltiness, mash the Pilsner malt at 147 F for approximately 60 minutes. To further increase extraction from the malt, perform a step mash following a regimen including a 30 minute protein rest @ 122F, 45 minutes @ 147 F and 154 for 15 minutes.
With a bready, malty flavor profile, Avangard pils provides a quality base for classic wheat beers with utilization rates of 35% - 45% Pilsner and 65% - 55% pale wheat malt ratios in the malt bill respectively.
