For an excellent British Extra Special Bitter, specify a grain bill with 92.4% ESB malt, 6.9% TF&S 60L Crystal Malt and .7% Belgian De-Bittered Malt for an O.G. of 1.054. Hop with Bramling cross @ 60 minutes remaining for 44 IBU’s and finish with 1 oz of UK Kent Goldings/ 5 – gallons. Ferment with Wyeast 1968 London ESB yeast.
For a blend of American and British, create an American Pale ale with the ESB malt replacing American 2 - Row malt, providing the beer with a British accent but fully Americanized with Wyeast 1056 and American hops such as Citra, Amarillo, Simcoe, Centennnial or other similar varieties.
