Sweet Orange peels are often used in conjunction with Bitter Orange peels in Wit beer and Saison recipes, although Wit or Saison styles are periodically spiced with only the sweet version. When combining Sweet and Bitter Orange peel, split the amounts evenly, adding 3 – grams of each at 15 minutes remaining in a 5 – gallon batch. Measure amounts with a grams scale for accuracy. When using measuring spoons, 1 full tsp will weigh approximately 3 – 4 grams.
While a cousin to the Florida orange, the sweet variety will not provide a metallic taste like the domestic version. Similar to the taste of Cointreau or Grand Marnier, the sweet orange peel will add a familiar flavor to Belgian style ales and holiday beers.
