Rounding out the flavor profile of the classic style from Scotland are strategic additions of chocolate malt, roasted barley and a touch of smoked malt.

Fermentables: 3.3 pounds of Amber Liquid Malt Extract (LME) and 1 pound of Amber Dried Malt Extract (DME).
Specialty grains: 4 ounces Caramel 60L, 4 ounces of Smoked, 4 ounces of Chocolate, and 1 ounce of Roasted Barley.
Hops: 1/2 ounce of Northern Brewer hops and 1/2 ounce Willamette (hops may vary due to availability).

To upgrade the yeast to a liquid culture, purchase the Wyeast 1728 Scottish Ale yeast separately. Enhancing the roast notes from the dark malts, the strain, at lower temperatures produces malty and clean flavors while providing a note of smoke.
