With a medium-high rate of bitterness, the India Black Ale recipe kit produces a beer with bold hop flavor and aroma. Noted as tropical citrus and slightly piney, the Zythos hop blend was specially formulated to produce characteristics described as exceptional and unique. Easily complementing the roast and nuttiness of the style, the Zythos.™ blend of North American hop varieties provides connoisseurs with the bold impact expected from an American Style Black IPA.
Contents of this kit include: ingredients, bottle caps, priming sugar, and brewing procedures.
Fermentables: 3.3 pounds of Special Dark Liquid Malt Extract (LME); 3.3 pounds of Amber LME; and 1 pound of Amber Dried Malt Extract.
Specialty grains: 8 ounces of Victory and 8 ounces of Caramel 80L.
Hops: 1 ounce of Magnum hops, 2 packs of 1 ounce Simcoe, and 2 ounces of Zythos™ (hops may vary due to availability).

To upgrade the yeast to a liquid culture, purchase the Wyeast 1098 British Ale yeast separately. Providing mild fruitiness, the strain ferments dry and crisp, allowing the malt and hop to dominate and especially highlights hops with stone fruit character in darker hued ales. (Additional yeast sold separately.)
To further add hop character to the India Black Ale, dry hop the beer for 3 days with a combination of 1 oz. Amarillo and 1 oz. Simcoe hops. Or, simply add in another 1 – 2 oz. of Zythos. Following the finish of fermentation, add the hops to the primary for 3 days before siphoning to secondary. Alternatively, siphon the fermented beer to the secondary fermentor and add the hops to the beer 3 days prior to packaging. (Additional hops sold separately.)
