Combining Munich and chocolate malts to create a dark, malty version of Hefeweizen, the amber-brown and medium-bodied beer finishes with a slightly sweet, bready flavor. The specialty wheat yeast produces the characteristic phenols found in traditional Weizens.

Fermentables: 6.6 pounds of Wheat Liquid Malt Extract (LME).
Specialty grains: 8 ounces of Chocolate and 8 ounces of Munich.
Hops: 1/2 ounce of GR Hersbrucker hops and 1 ounce of GR Hallertau (hops may vary due to availability).

To upgrade the yeast to a liquid culture, purchase either the Wyeast 3068 Wehenstephen or 3638 Bavarian Wheat yeast separately. The 3068 provides a bright fruitiness and accents of clove and wheat while the 3638 accentuates banana, fruit and wheat. (Additional yeasts are sold separately.)
